I just don’t understand the overwhelming outrage on this one.   “Give us back the horrible thing the horrible people made that reminds us how horrible things were!”

This Halloweeney motherfucker is one of the best things I’ve ever cooked.

How best to describe dishes?  Should it have a name to catch you followed by an expanded version, an attempt to get every component into one sentence?  I do like naming things, but I don’t even know how to be cute with this.  Here’s what it is.

The center of the dish is a lamb shank confited in pork fat and olive oil with rosemary and peppercorns.  The fat’s drained off and what’s left is a thick, intensely flavored lamb jelly that the lamb is then roasted and basted with until it’s glazed.  It’s on black beans with bacon, leeks and garlic and on top are roasted orange peppers sliced and sauteed with butter.  To finish, a garlic cream made by simmering garlic cloves in heavy cream for about 40 minutes and then whizzing in the food processor.

I will use white beans to enhance the similarity to cassoulet (and because they’re just a plainly better option) next time.
